I had a free and easy tour and Hong Kong is a great place! Most people think that you can only shop in Hong Kong, but this is totally not true. I did quite a lot of treking there and Ocean Park is really great!

HK Tour provided at the hotel is reasonable price but one problem. You are expected to tip the drivers before you leave the bus. Also, the tour bus did not wait for us on the return journey back to the hotel from Ocean Park.

I took the tram trip up to the top of Victoria Peak at night, which gives a tremendous view.

I have been to Hong Kong many times before as I am currently living in Shenzhen and there are always new things to do and see in Hong Kong.
Hiking in the New Territories is great also try to visit some of the old Hakka villages. A visit to Cheung Chau is also worthwhile. A tram ride up then coffee at the Peak and a walk down the mountain is a great afternoon.
Taking the bus to Stanley markets (it's amazing how they negotiate the narrow roads) is worthwhile and a ride on the Star Ferry during both day and night is also a cheap and great view of the Hong Kong harbour. A tram ride on the upper deck can also be a fun and cheap ride for $2HK.

I highly recommend taking the walk around the Peak in the HK tourist board's pamphlet. Head up about an hour before sunset and walk so you will see the sunset first, and then the city at night after (I believe that would be clockwise). Great views, very peaceful.

In the airport, pick up the brochure that lists the walking tours. It is in a kiosk. This gave me lots of ideas for things to see in Hong Kong. You could fill 5-6 days from this brochure alone.
This trip I went to see the Buddha (on the same island as the airport). It's a very interesting trip, but does take a half day or so. There is a restaurant and temple, so there is a lot to keep you occupied.
I visited Stanley on a Sunday. It's a relaxing place to have lunch and hang out. The Temple Street Night market is definitely worth a visit.
I also went to the seafood village on the Kowloon side using MTR and buses. That took a while, about 40 minutes, but was fun. Be aware that you need to negotiate your fish prices up front and they will hit you with a "cooking" fee. It's still less than a lot of what the nicer restaurants charge.
I bought an Octopus card at the airport and used it extensively. The MTR is excellent! It got me everywhere I wanted to go.

I did two option tour in Hong Kong.
Aberdeen Jumbo Dinner Cruise hkd 670 and Yen Mun Fish Market Cruise hkd 370.
Yuenmun was good and worthy about that, but Jumbo cruise food was horrible. paying too much and food quality was low class.
You'd better go to Tang's Court in Great Eagle Hotel in Tsim Sha Tsui. Lunch set is only hkd 180.

I did not do any tours but there is an excellent book at the airport that gives you walking tours of Hong Kong. These are easy to follow and they take you through some interesting areas. Also if you plan on catching a bus to Stanley please be advised that you must go with exact money otherwise they will not let you on. They will not give change and I also found the Central bus station will not change your notes for coins. You have to find a bank to get change.
