Ocean Park: located at Hong Kong island, 3 min walking distant from Kowloon Hotel to Star Ferry terminal (ticket costs at HK$2/adult & HK$1/child), one could get package ticket at Hong Kong terminal for returned bus ride + entrance fee to Ocean Park. Very enjoyable place for both kids and adults during cold weather.

If possible stay in Hong Kong Island where all the night action is. Kowloon is great for shopping and you can buy stuff for 50% of what you would pay on Hong Kong Island. But the nightlife after 11pm is on the HK side and puts a pain to get back to Kowloon once subway and ferry closes. Ashley street and Ned Kelly's bar are worth a visit.

Very similar to New York, very crowded. Money talks here. No problems haggling prices during shopping. Food mostly delicious, average on one or two occasions. Club/Bar-hopped a lot, drinks were pricey but not watered-down. Places tended to be on small side (Hong Kong after all), some insanely crowded. Some clubs like The Drop membership only, chatted up some local connections and got in. Not very impressed, packed like sardines, bar so-so (no Heineken ha-ha).
Recommend bring taxi fare and just keep moving to different places until you find one you like. MTR is great, easy to use and convenient. Really seemed to negate location of our hotel. Can't recommend any tours or much else (mostly bar-hopped and checked out nightlife).

If you care for good authentic Chinese suitable for a western or eastern palate, try the Wing Wah restaurant on Henessey road. Just across the street from the Century Hotel. We were taken to dinner there by two different Chinese business men, both commenting on how delicious the food was. Further down Hennesey is The Carlton, a pub that plays great oldies, has a mixed crowd of 20 something to 50 something all dancing (gyrating might more accurately describe), to the tunes on the floor and on top of the bar. Sure to be a great time.

American Peking Restaurant in Wanchai is excellent and gets very busy but the food is worth the wait. Also bars like Carnegies and Joe Bananas located again in Wanchai are really good fun. Drinks are reasonable for HK, but the atmosphere is well worth it!!

If you are staying in Wan Chai do not miss to have lunch or dinner in the Hopewell Centre revolving restaurant. Not only is the food good (not cheap but it's a smartish venue) but the views are fantastic.
Also if you are keen on horse racing the Happy Valley race track is just around the corner from Wan Chai and I spent a fun Wednesday evening there with thousands of other Hong Kongers who are horse racing mad. A must do for visitors.
In addition, Wan Chai has its own Star Ferry pier which gets you to Kowloon in less than 20 minutes.

If staying for one night, its a bit of a trek from the airport, 1 hour by city bus A11. near metro/tram/bus. More buses than people round here. ditto banks. night out? hmm, go to wanchai or central. not a lot to do near here.

The Peak offers breathtaking views of Hong Kong and the the ride on the tram up to the Peak is itself an experience.
Ocean park was a disappointment, rather pricey at $204 HK while several of the main rides/attractions were closed. Not recommended.
Kowloon is the more interesting part of Hong Kong, easy to get there using the MTR. Several of the streets in Kowloon are closed to road traffic at night and are then made into walking streets.
The "Turbo Jet" boat to Macau is well worth the $130 one way and is a nice side trip to Hong Kong.
