Schloss Neuschwanstein: beautiful castle, upon which Disney patterned Cinderella's castle in Disney World. I highly recommend hiking up at night, where the castle seems like your own private fairy tale. Much more magical than during the day, when you are shoulder to shoulder with many other tourists: we walked up at about 9:00 p.m. the night before our official tour, and saw not a single person. The walk took us about 20 minutes uphill, but only 10 going back down. Definitely worth it!
I recommend taking the carriage ride up to the castle during the day - the hike is pretty steep, and if you've done it once, you deserve to ride the next time. You will be packed in with tourists from many countries, however. During our ride, the driver - in traditional German attire - packed even the front seat with Japanese visitors, then seated himself on the lap of a (very surprised) old man. Walk down, though, instead of paying the 6 Euros (about) to ride. There is a pretty waterfall and nice view of the other castle on the way down.
You may want to ask at gift shops how much you need to spend to get them to do the duty free paperwork for you. It is supposed to be 25 Euro, but we found some shops that said it was 50. This is wrong, but they can do this. Take your money elsewhere.
Be sure to have a piece of traditional Black Forest cake while you are there. The hotel we stayed at, Hotel Lisl, has a delicious one.

Good location for getting to and from the retreat center that we work at, also an easy walk to shopping and the Schnoor, where there are some great little shops and restaurants, very charming area of Bremen.

Rothenburg o.d. Tauber is Germany's premier medieval cities; although it is rather touristy. The half-timbered houses are well-restored and the entire old city is clean, safe, and simply amazing. You MUST go along on the "Walk of the Night Watchman". It is an entertaining, yet educational, tour of what life was like in medieval Germany. We also do all of our Christmas shopping in the Kaethe Wolfahrt stores (nutcrackers, smokers, pyramids, and hand-made ornaments).
