Took a local day tour organised by local tour company, visited Victoria Peak, Man Mo temple, Aberdeen fishing village, jewellery factory, Stanley night market. Frankly if you had time you can visit these places on your own at cheaper cost. Not happy with the local tour and certainly recommend visitors to visit tourist spots by themselves.
We also went to Ocean park by ourselves and it was extremely easy from the Jordan MRT station (or for that matter from any MRT station) next to the Shamrock Hotel. You need to really spend almost a whole day there if you want to enjoy all the facilities at Ocean Park.
HK is very tourist friendly with lots of tourist information (via brochure, leaflets etc available at their tourist offices, hotels etc). As for shopping would recommend to lookout for bargains/sales at established department stores rather than at night markets like Stanley, Temple Street, etc when you really have to bargain and yet not 100 percent confident of the quality.
Also went to Macau on day trip by ourselves. Again most of places in Macau you can find by yourselves if you have time (don't forget to carry your passport to Macau). If we had joined a local tour in HK to have day trip to Macau it would have cost us about HKD630 per head, but we went by ourselves and spent only around HKD300 per person.
Food is rather expensive for us, and found that food outlets in the hotel neighbourhood did not have menus in English. As such found some outlets to be unsrupuluous in their billings. Strongly recommend non Chinese speaking or reading tourist to visit food outlets with English menus and prices clearly written on their menus.
A highly recommendable restaurant where you can savour all the local HK favourites(noodles, congees, rice dumpling, etc) plus special desserts is the Sweet Dynasty Restaurant at 88 Canton Road, Tsimsatsui, Kowloon (website: www.sweetdynasty.com.hk). Be warned and be prepared to wait for a seat as it's extremely popular but it's worth the patience!! They have an English menu if you request for it. You may really have a problem to choose what to eat as they have so many delicious items!! Checkout their website.
From our travel experience especially if you plan to do it independent of group tours, is to obtain as much infomation as possible prior to your visit to that country. By doing so you can plan your itineraries / transpotation / lodging etc much more effectively.

In Hong Kong, most of the restaurants are pretty inexpensive. The food is ok. Taking the tram to the peak is a must. Shopping everywhere, both underground and above ground, from funky to traditional..... Stanley Market and Temple street, you will find much lower price than those Chinese Products department store.

For shopping Central near Admirality station is pretty good. Lan Kwai Fong is a very good area for night life into the early hours. Happy hours make it worth starting early!
Ladies market off Nathan Road and Stanley market are great for gifts. A good touristy thing to do is to take the Victoria Peak tram (not far from the Bishop Lei). Here you wil find terrific views of the city and shops and restaurants for your enjoyment. Soho area has a good choice of restaurants and using the escalators makes it a typically Hong Kong experience.

Make sure you don't spend all your time shopping and get away to some of the islands (lovely walk from the two main towns on Lamma island plus Lantau's worth a visit too).
Hong Kong is surprisingly beautiful and transport's cheap by Western European standards. Clearwater Bay in the New Territories is also worth a visit. It's so easy to get around that tours aren't really worth the extra expense. Get an Octopus travel card as nearly all forms of public transport accept it. For a taste of how Hong Kongers do their shopping, go to Times Square near Causeway Bay and after buying the necessaries dine in the excellent food hall in the basement.

The larger resturants on the street are very good. We tried a couple of the smaller ones, just remember to know what your buying and beware of the prices. Jade & night market are very close and you can find a lot of good things there.
It was a nice walk to Star Ferry and the museum. But this is not the best of neighborhoods. I would not stay in this area with my children.

I have not been visiting Hongkong since 1996. It changes a lot. Except clothing, everything seem so expensive even compare to US standard. The street are packed with people.
