For the Canton Fair you must get a prior invitation - seems a bit of a rigmarole - and it would help if there was a later last train back.

We are currently living in China, near Shanghai. It was interesting to compare the two cities - Shanghai and Hong Kong.
Hong Kong is busier and dirtier than Shanghai. But the transportation system is second to none in the world. Also, we found that despite the number of people, there was not as much pushing and ignorant behaviour as compared to Shanghai. (No spitting in the streets!)
We found the publications available for tourists very helpful - the map of the city and the Walking Tours of Hong Kong were especially useful.

Buy the MTR 3 days ticket, it is real worth with.
Dont us the Berlinz handbook, it's totally incorrect about prices, so you pay 3 times more in a restaurant then you thougt.

Hong Kong is still fantastic - Tsim Tsam Tsui is still the place to eat, shop etc..But be careful - that bargain in jade may turn out to be very expensive glass (or even plastic!). Bargain in almost every place - you can do it politely by asking if there is a discount. Definitely forget every place that the guide brings you to, if you have one, except to check out the prices (your friendly guide is getting a huge huge commission - he/she is most definitely not your friend).

Hong Kong is the most exciting city on the planet. The energy and discipline of the people are superb. The service is great. One drawback: I had real difficulty exchanging traveller's cheques on Saturday, except at the hotel.

We are Australians living in the Philippines and we found Hong Kong to be far too expensive. This is definitely our last time to visit because of this. We had been warned, but still couldn't believe the prices they charge even for local things. There is definitely no shortage of things to do and see and we literally walked our legs off and rode all sorts of transport (6yo son was happy) trying to see everything. 3 days was not enough but the wallet & credit cards were definitely in melt down mode by the end of it.
